Hummus - Instant

Hummus





1 tsp garlic powder 
2 cups canned garbanzo, drained
2 tsp salt 
1/2 cup tahini 
1/2 cup water
2 lemons squeezed (1/2 cup)
2 tablespoons olive oil 
2 tsp cumin powder 
zest of 1 lemon


Add all of the ingredients to the food processor and process until the hummus is pureed. 
Sprinkle with paprika, Serve with toasted pita. 

Variations: 
  • - Add 2 tablespoons red pepper paste. 
  • - Add 2 tablespoons pesto.

Zucchini Chicken Bake






Zucchini Chicken Bake





2 tbsp oil
2 onion cut in half and sliced
2 russet potatoes sliced 1/4 inch thick
2 zucchini sliced 1/4 inch thick
2 roasted chicken breasts sliced 1/4 inch thick
1 large can crushed tomatoes
1 tsp each salt, thyme, black pepper & garlic powder
1/2 cup of grated Parmesan cheese


Heat the oven to 325 degrees.
Layer
chicken onion zucchini & potato alternately in baking dish
Pour crushed tomato evenly over the top.
Sprinkle salt, black pepper dried thyme oil & garlic.
Cover the dish with foil and bake for 55 minutes
Remove foil, sprinkle Parmesan

Bake 20 more minutes.

Salsa homemade



2 cans whole peeled tomatoes (15 oz can)
1 small jalapeno diced
2 Tbsp onion flakes
1 teaspoon garlic powder
1 teaspoon ground cumin

Process all ingredients in the blender.
Fill it in a jar, refrigerate,
Best used after 24 hours for tastes to blend.

Roasted baby carrots




Preheat oven to 350 F

2 pounds of baby carrots
2 tsp toasted sesame oil
2 tablespoon soy sauce
2 tablespoon honey
2 tablespoon balsamic vinegar
1 orange juice and zest

Place all in a bowl, mix.
Spread on a baking sheet
Roast 25 minutes.

This is an amazing and inexpensive side dish for meats.

Lemon Scones



This makes a great hostess gift for brunch.
1/4 cup lemon juice
1 teaspoons grated lemon peel
2 cups all-purpose flour
1/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup cold butter or margarine
1/4 cup milk
Additional sugar

Combine flour, sugar, baking powder, baking soda and salt.
Cut in butter until it's like fine crumbs.
Add milk and lemon peel, stirring just until mixed.
Turn onto a floured surface knead six times.
Shape into a ball.
On a greased baking sheet, pat dough into a circle.
Cut wedges in the dough.
Sprinkle with sugar.
Bake at 350 for 25minutes.

Nutella Nugges – 4 ingredients only




  • 1 cup Nutella
  • ½ cup mini chocolate chips
  • 1 cup Flour
  • 1 Egg
Turn oven on to 325 F.
Mix all ingredients
Make a big ball, at this point you can refrigerate and make it “fresh” as needed
Make small balls about walnut size
Bake on a cookie sheet 9 minutes.

Zucchini “fries”



4 zucchinis quartered lengthwise

3/4 cup bread crumbs

1/2 cup grated Parmesan cheese

1/4 teaspoon garlic powder

1/4 teaspoon paprika

Preheat an oven to 400

Combine the zucchini, bread crumbs, cheese, and paprika in a zip top bag

Place the breaded zucchini on a baking sheet sprayed with canola

Bake 15 minutes till golden

Sprinkle sea salt if desired

Meat Loaf – 211 calories a slice



1 (8 oz) can crushed pineapple, reserve ¼ cup of juice
4 egg whites
2 small cans tomato sauce
2 cups soft wheat bread crumbs
2 tbsp onion flakes
1/2 tsp prepared horseradish
2 lbs lean ground turkey
1 tsp salt


Glaze:
1/4 cup reserved juice
3 tbs ketchup

Combine all in a large bowl

Add turkey and mix well.

Pat into a loaf pan.

Cover and bake at 325F for 1 hour.

Combine juice and ketchup and pour over loaf.

Bake, uncovered, 15 minutes.

Cut into 8 slices, 211 calories each.

Paella Shrimp and Scallop


2 pounds raw large shrimp

1 pound sea scallops

Salt and pepper

1/2 cup chopped Italian parsley leaves

Lemon wedges

6 cups chicken stock

3 tablespoons olive oil

1 medium onion, chopped

4 garlic cloves chopped

1 red pepper sliced

1 green pepper sliced

1 teaspoon saffron

4 links sausage sliced

2 cups white rice

1 can 10oz diced tomatoes

3 tablespoons tomato paste

Boil chicken stock

In a saucepan heat the oil, add the onion, the garlic, the peppers, the saffron and the sausage.

Cook until vegetables are soft

Stir in the rice, tomatoes and tomato paste and cook for 5 minutes.

Add the boiling chicken stock stirring constantly until the stock is absorbed.

Cover the paella pan 25 minutes, until rice is tender.

Add the shrimp and the scallops and let cook covered for 5 to 7 minutes more.

Decorate with the chopped parsley and lemon wedges.

 Mango Black Bean & Couscous salad



1 red bell pepper, diced
1 cup canned black beans drained
1 scallion sliced
1/2 cup couscous
1 /2 cup water
1/4 cup orange juice
1/4 cup chopped fresh parsley
2 tbsp vinegar
2 teaspoons sesame oil
1 /2 tsp ginger
1 mango diced

Prepare couscous by adding orange juice and boiling water. Let it rest.
Meanwhile, whisk vinegar, oil, ginger in a medium bowl. Add mango, bell pepper, beans, parsley and scallions; toss to coat.

Chili can can

2 lbs. ground beef
2 (8 oz.) cans tomato sauce
2 (16 oz.) cans bean of your choice
2 tbsp. chili powder
1 tsp. oregano
1 tsp. salt (to taste)
1 tsp. cayenne pepper
1 (16 oz.) can diced tomatoes
1 (12 oz.) can beer
2 tbsp onion powder
2 tbsp cumin

Cook ground beef in frying pan and drain liquid.
Mix beef in large microwaveable pot with all above ingredients.
Simmer 10 minutes on high
Top with shredded cheese
Serves 8 to 10 people.

Love Trader Joe - Tortellini soup




1 pkg of pesto tortellini
1 large can of Marinara sauce
4 cans of water measured with the above can
1 pkg of frozen spinach
1 can of drained garbanzo
1 bunch of parsley chopped
1/4 cup of vinegar
1 tsp nutmeg
1 tsp black pepper
1 tsp red pepper flakes
1/4 parmesan to sprinkle at the table

Place all in a large pot
Bring to a boil
Simmer on low 60-70 minutes.
Enjoy!

Pizza for superbowl - ready in just 30 minutes.

INGREDIENTS:

1 pkg.refrigerated pizza dough
2 teaspoons oil
1/2 cup pizza sauce
2 cups shredded mozzarella cheese
1/2 cup chopped fresh parsley
6 0z sliced pepperoni
1 stick (1 oz) string cheese

Heat oven to 400°F.

Spray cookie sheet with cooking spray.

flatten dough on cookie sheet, press out into a rectangle.

Brush with oil; bake 7 minutes.

Spread pizza sauce over crust, top with mozzarella cheese and parsley.

Arrange pepperoni in football shape.

Cut string cheese lengthwise into 2 strips.

To make football laces, place 1 strip horizontally.

Cut remaining strip into 5 pieces; arrange vertically on top of horizontal strip.

Bake 14 minutes longer till crust is brown.
